Doburoku” is made in the shrine's brewery in late January, when the ground is covered with snow, using a unique technique passed down from generation to generation. At around 3:30 p.m., after the doburoku ceremony, doburoku is transferred from a large sake barrel to a container called a kittate for pouring, and ladies in kappo-gowns serve each guest a cup of doburoku, filling the hall with a mellow aroma. It is said that doburoku has been used for rituals since the Wado period (about 1,300 years ago).
